ارزیابی خواص آنتی‌اکسیدانی و آنتی رادیکال‌های آزاد عصاره‌های به‌دست آمده از هسته انار (Punica granatum L.)

چکیده

در این پژوهش عصارة هستة انار با شش حلال با درجات مختلف قطبیت استخراج شد.  بازده استخراج، ظرفیت
آنتی­اکسیدانی و احیاکنندگی، توانایی به دام انداختن رادیکال‌های آزاد، ارزیابی تأثیر آن بر مقاومت حرارتی و شرایط اکسیداسیون روغن بدون آنتی­اکسیدان سویا به­عنوان یک سیستم مدل غذایی به­صورت آزمایش فاکتوریل و در قالب طرح کاملا تصادفی با سه تکرار آنالیز شد.  بررسی راندمان عصاره‌گیری نشان می­دهد که حلال‌های هگزان و استون به­ترتیب بالاترین راندمان استخراج را از هسته و کنجاله هسته انار دارند.  نتایج بررسی قدرت آنتی‌اکسیدانی احیای یون‌های آهن
سه ظرفیتی و همچنین فعالیت به دام انداختن رادیکال‌های آزاد عصاره‌ها، نشان می­دهد که عصارة متانولی هستة انار دارای بالاترین قدرت آنتی‌اکسیدانی و آنتی‌رادیکالی در بین سایر عصاره‌ها است.  ارزیابی پایداری اکسایشی عصاره‌های استخراجی به روش رنسیمت نشان می­دهد که عصارة متانولی هستة انار به‌صورت معنی­داری پایداری اکسایشی نمونه شاهد را افزایش می­دهد.

Antioxidant and Antiradical Properties of Pomegranate Seed Extract (Punica granatum L.)

چکیده [English]

The effect of 6 solvents with different polarities on the extraction of pomegranate seed extracts was studied. Extraction efficiency, reducing activity, radical scavenging properties and the effect of each extract on thermal resistance (oxidative stability index) of antioxidant-free soybean oil were analyzed using a factorial test in a completely randomized design with 3 replications. The results showed that the highest extraction yield from pomegranate seeds was hexane extract and from defatted seeds was acetone extract. The antioxidant properties of the different extracts were analyzed using FRAP and DPPH and revealed that methanol seed extract had the highest antioxidant properties. The antioxidant efficiency of the seed extracts prepared using solvents in combination with antioxidant-free soybean oil was measured using a Rancimat. The results showed that methanol seed extract increased the oxidative stability of the oil sample.
